San Diego Life and Business Success Coach Kathy Nelson is so excited about her life, she has a custom license plate on her car that reads ‘Passion!’

Kathy shows time strapped business professionals how to connect the dots from their passion to their prosperity. She was named the San Diego Best Life Coach by the San Diego Reader Magazine and been featured in San Diego Magazine, Good Housekeeping, numerous newspaper articles, seen on national and local TV, and published in three best sellers; two editions of The Big Gratitude Book, as well as Heart of a Military Woman.

An avid painter, she also enjoys writing, loves social media, and supports Boston Terrier Rescue.

Big Why

Kathy has deep values around independence and freedom. She wanted to be able to create something that was collaborative. She chose coaching because that’s the place she felt she could add the most value and bring the most help to people.

Mindset Challenge

The most difficult mindset challenge for Kathy was going from six figures to zero! She was almost seduced to go back to her old world several times, but stayed the course, kept her focus and followed her heart, regardless of what her ‘gremlins’ were telling her.

Energy Plan

Daily

On a day to day basis Kathy is a meditator. She wakes up each morning and says ‘good morning to God’ then it’s out the door to take her Boston terrier for a walk.

Recharge

She puts on music wherever she happens to be. A change of pace, perhaps down to the beach or a game of cribbage with her daughter does the trick. Sometimes she gets away to the desert for a few days. Good conversation and time with family and friends are staples as well.

Business Fun

Kathy has been out speaking with her daughter to various women’s networking groups and has been so enjoying planning programs to launch later this year.

Business Vision

Over the next five years, Kathy would like to expand her business more into the online world. She has had a steady base of twenty clients at a time over the years, but would love to reach more people.

Recipe

Easy Hummus Mediterranean Style

Ingredients

  • 2 (15.5-ounce) cans chickpeas (garbanzo beans), rinsed and drained
  • 2 -3 garlic cloves, crushed (I will roast if time)
  • water
  • 1/4 cup tahini (sesame seed paste)
  • fresh lemon juice to taste, I like 3 to 4 tablespoons
  • 2 tablespoons extra-virgin olive oil
  • Sea salt about 3/4th teaspoon
  • black pepper, about ¼ teaspon
    • Zahtar

To Make – Easy Prep

Place beans and garlic in a food processor; pulse 5 times or until chopped. Add a little water and remaining ingredients; pulse until smooth. Or just mash.

Take a beautiful platter and put hummus in middle on the plate, drizzle more olive oil, squeeze fresh lemon, sea salt, and sprinkle liberally with Zahtar. Available online. I get mine from www.TemeculaOliveOil.com (951-693-0607) and have ordered from Amazon.

Kathy dresses the platter with good olives, toasted pita bread or some of the good eastern breads you can find in Trader Joes or even in the grocery stores.

You could sprinkle with Feta if you like it as well.

It is an appetizer or a meal with a nice glass of wine or drink of choice. It works nicely with a group.   If you are out of Tahini, make it anyway! 🙂
