Big Why

Karon tells the poignant story of how her original reason for going into business for herself never materialized. But in spite of her disappointment and heartbreak, she was able to find a new purpose and meaning in her work, which not only helps her own business, but benefits her community and continues to ripple out into the world at large.

Apple Sage Pork  with apples, sage a touch of bacon and a taste of brown sugar. Karen loves it and you can cook it on top of the stove. Just scroll down to the bottom of the page for the full recipe.

Apple Sage Pork

Ingredients –

2  slices bacon
4  center cut pork chops
1  teaspoon seasoned salt
1/4 teaspoon pepper
1  apple cut into chunks (a note from Ellen – Granny Smith’s go great with pork!)

1 1/2 teaspoons dried sage
3/4 cup canned (or homemade!) chicken broth
1 tablespoon light brown sugar
2 tablespoons red wine vinegar

To Make –

Cut bacon into 1/4 inch pieces; place in large sauté or seasoned cast iron pan. Cook on medium high heat 1 to 2 minutes.

Sprinkle pork chops with seasoned salt and pepper.

Place the pork chops in pan using tongs. Cover the pan and cook 6 to 8 minutes, turning pork and stirring bacon occasionally until browned.

Add the apple chuncks as well as the sage.  Then add remaining ingredients. Bring to a boil, reduce heat to medium and simmer uncovered 12 to 15 minutes. Turn and stirring occasionally until sauce has reduced by half. Check for tenderness and serve pork with apple and sage sauce.
