Michelle’s routine begins with a morning practice of gratitude and a setting of her intentions for the day. But she also has an ‘end of the day’ practice as well, where she revisits her day and looks at where she showed up for herself.

Recharge

Michelle just came through a big push so she packed her bags and went off to her mentor’s house for a marvelous 3-day woman’s retreat with her Mastermind sisters. When she’s not going to a retreat, it’s important for her to get completely away and just turn everything off. Even just going for a mindful walk can be enough.

Business Fun

Michelle is learning to do video for teaching and connecting. For her it’s like playing! Listen in as she describes how she’s turned her kitchen and her garage into a video studio.

Business Vision

Accessibility is very important to Michelle and she’s in the midst of designing this into her programs so her clients can get the support they need wherever they are and when they need it. Michelle’s a big dreamer and doesn’t settle for small.

Recipe

Tomatillo Sauce (for fish or chicken)

Ingredients –

15-20 tomatillos
1 jalapeño
1 small bunch fresh cilantro
2 cloves garlic
½ teaspoon salt

Prep time – 5 minutes
Cooking time – 20 minutes
Serves 4

There are two versions:

For the Roasted Version: place the tomatillos and the jalapeño on a sheet pan. Drizzle a little olive oil over the veggies and bake at 400° for 20-30 minutes. Place the ingredients in the blender and add the cilantro and the garlic clove. Blend well. Add the salt. Blend.

For the Quick Version: Another way to make the sauce is to softly boil tomatillos in water until they soften about 20 minutes. Place the tomatillos in blender with garlic clove, cilantro, and a whole jalapeño. (Seed the jalapeño if you don’t want it spicy.) Blend well. Add the salt. Blend.

Serving Suggestions: Put your fish or chicken in a baking dish and pour the sauce over it and bake uncovered in a 350-degree oven until done. The sauce thickens beautifully as it bakes.
